Today we took a tour of a kitchen.
I know touring a kitchen might sound terribly boring. But think of a kitchen kind of like you would think of the landing pad of an aircraft carrier. That big. That insanely busy. That well-organized, because to be less organized would make the whole thing fall apart.
We walked through 10 minutes before lunch. The flat panel displayed (among other things) 180 planned made-already plates of fish and chips. With a potential 180 ready to be made should the made-already ones drop low.

They feed 2000-ish people 4 times a day. Or pretty much continuously. They had flat panel computer screens! In a kitchen! And when an order is made, the waiter (actually, one of two) punches it into a computer... It prints out a receipt with a barcode. When the order is picked up, the barcode is scanned, to note that it has been taken out of the kitchen. Order completed. |
