Or at least a few days....

It turns out that when the husband is off traveling the world, I bake a lot more. Since I haven't baked in months, "a lot more" would be a non-zero amount.

Things I did while the husand was out of town:

  • Butternut squash lasagna. Twice. I'm still working on perfecting the recipe. Rev 2 was a little too sweet and needed more zip. Rev 3 had plenty of zip (3 jalapenos!). I'm still deciding if the zip really detracted from the entre experience... I'm not completely sure the bite of the jalapenos is the direction I want the dish going...

  • Banana bread. Evidently the husband keeps eating any potentially brown bananas. But I bought bananas like he was going to be here... Which became brown bananas. Which make really tasty banana bread. Yum!

  • Laundry. Ok,  not completely exciting. But I think I've done mine so T has an open path to the washer when he comes home.

  • Dishes.

  • Shredded the 4 inches of paperwork waiting to be shredded. And took out the resulting trashbags.

  • Grocery shopped.

  • Ran. I was supposed to run on Thursday and Sunday. I ran Thursday and walked today. My knee hurts for no reason I can figure and has done so for days. And without someone waiting for me, I just walked 3.8 miles. Takes longer, but that is OK if it is just me at the gym.

  • Henna-ed my hair. It has been a whlie. Traveling for work last year, and then traveling  to take care of my brother G this year has kept me from having the time to attempt.

  • Scanned through my formalwear and skirt collection. Filtered out a bunch for donation. Turns out that there are far more than I thought that I'm not attached to and/or don't look good enough on me.

  • Had dinner with S. Fed her rev 2 butternut squash lasagna. She was really polite and claimed she didn't hate it. Since she doesn't like butternut squash, I'm going to take the not-gagging (visibly) as a win.

  • Worked. Because that is what I do, weekdays.

  • Got about 8 hours of sleep every night. Went to bed and got up at consistent times.

  • Kept the cat from dying. Just checked on his food and water again this morning. Since I filled both up yesterday, I am suspicious at the limited left this morning. I think we have a visitor eating/drinking.

  • Checked the mail. It seems small, but T gets grumpy when we get hate mail from the post office asking us to let them know if we are going to be out of town. And it was just him out of town...

  • Caught up on episodes of "Bitten." It diverged from the books, to my disappointment, but at least the first season and a half were not too far off.

T is back in the country. But I feel like I've accomplished a lot since he left Wednesday.

What did I NOT accomplish:

  • I wanted to put together a box of books for donation.

  • I wanted to do some painting.

If this is a relatively traditional lasagna, just subbing in squash for protein, maybe try crushed red pepper to add your zip? It has bite, but is more consistent with the type of spice one expects from a lasagna. Or if it is a very non-traditional lasagna with that squash, try Moroccan spices--cumin, coriander, ginger, allspice--all have a bit of bite while still complementing the squash.

It is the more nontraditional one. Butternut squash sauce, goat cheese, walnuts and some greens. I'd been putting in some ginger, but I like your other ideas as well. Adding them to my rev 4 plans...

Ahem, I believe my exact words were something to the effect of "Holy crap, this is REALLY good and I don't even like squash!"
