Paella

In honor of my father's birthday and in consideration of my current vegetarian ultra-healthy few weeks (it would be a month, but this is impossible to travel and eat), I am making up a Vegetarian Paella recipe  I actually found at least 3 different edible-sounding vege paella recipes online, but this one (a) sounded yummy (b) I had most of the ingredients without a shopping trip.

Post-cooking note:  It was pretty tasty.  I recommend it.
